If you have one physical copy and two consoles can you play different games on them?

If I had two switches and one physical copy of the game, could I have two islands off of that one game cartridge by sticking it in another switch? I know multiplayer wouldn't be possible between those islands, but if you just had one cartridge to make an island then later got a second cartridge so you could access the local multiplayer aspect, would that work?

Yep.
If you have a cartridge you can use both switches c: same with the download.
Only thing is you'd need teo cartridges or a cartridge/download or two different downloads in order to play multiplayer between the two islands c:
The data is saved to the switch not the cartridge or Nintendo account
