I think it'd be nice if we could annually remember Iwata out of gratitude, but who knows :0

Not that I know of, and I can't imagine there'd be a restock for this occasion. I could only ever imagine a collectible being added to commemorate Iwata, but I feel that is also slim. It'd feel bad seeing a bunch of them being scalped too, just like when people wanted Iwata Amiibos. I would hate to see the face of such a great man in the hands of people who never actually cared about who he was to begin with or what he did for others while he was at Nintendo. v_v Especially if they were using memorabilia of him for selfish purposes, like putting his fans through extremes.
