So I haven't been playing ACNH very long, less than a month in real time right now, and I started a new job that takes up my Sunday mornings. Is it possible to TT back several hours to buy the turnips and then re-sync my Switch the same day without them spoiling? Or should I start buying them off of other players?

yes it should be possible to do that they don't spoil until the next time she comes to sell you turnips
I believe time travelling forwards is fine (before the Sunday when they will obviously rot).
Time travelling backwards with them is not okay though and they will all die.
So yes you should be fine to go back in time to get them and then change the clock to present time with them
