I have a bunch of black roses that I watered with the gold watering can. My understanding is that the gold can can turn the black roses gold. It didn't turn any gold but a single gold rose sprouted up next to them. Is that what's supposed to happen?

You're not really breeding black roses to create gold roses. You're basically cloning them and the clone has a special 'tag' that makes it a gold rose.
Only the black rose directly in front of you gets the 'tag' that allows gold roses to spawn near it the next day, so you have to water each black rose individually.

heres a question: I literally didn't water any of my black roses with a golden watering can because I haven't actually gotten around to crafting one (and kinda think the gold roses look ugly whoops) but I had a gold rose spawn anyways?? is that a thing that normally happens just randomly sometimes?

I've had this happen, too! Nobody even visited my island and I haven't gotten to trying to breed gold roses yet. I'm not sure if that's normal, honestly.

Today and Tuesday I found a gold rose bud. A month ago was the last time I watered the black roses with the gold watering can. The gold watering can stays in storage and is only used for black roses. No one waters my flowers.
afaik, black roses keep the gold rose "mark" if ever watered using the golden can, until a gold rose spawns from it
so that was probably what happened

also, to op: if you aren't already, it's better to water with a non-golden can first and then go back with gold
since the golden can can't be customized to reset it's durability counter, so avoiding watering "dry" flowers with it will make it last longer as well
