Edit: In another signature shop, I noticed the following backgrounds:

Even the simple backgrounds you listed are a little too fancy for my taste, though maybe it is just the bright colors (I prefer darker colors, or at least greater contrast, so that the signature does not feel like it is just a giant bright painting into which all the text and sprites melt, if that makes any sense).
I would like for a signature that is really simple and only as big as it has to be (I prefer small signatures). As an example of my taste, here is a banner I had done for my message board:

Obviously, the signature requires a lot more information to be included than that banner, so it likely has to be taller and will certainly have more detail. I don't mean to cut any of that out, only that anything that is unnecessary can be left out.
Of course, if you feel like adding a little artistic flair here or there, I don't mind, but I leave that up to you.
By the way, if you want to risk adding a background because you think it would be nicer, I don't mind, but as with everything else I leave that to your discretion. I only want to impress my preference for minimalism.
