I can't say any of these are celebrated or even observed outside of church mentions here in the USA.

i've forgotten-- is Boxing Day in the UK mostly for giving gifts to the postman and employees and such, or is that when one exchanges gifts with friends and others outside of your direct family?

I celebrate boxing day at my friend's house every year

To answer your question, I always thought it was the day you celebrate all the left-over "boxed" food from Xmas, but his mom just might be a lazy cook
 
We have Boxing Day in Canada as well, but I'm not quite sure if it's celebrated in the same way as the UK (all I ever see is an excuse for businesses to throw more sales)? Either way, I'm snowed in, so I can't pick up any left-over chocolate from the holidays or whatever.
 
Um... Well, it's my birthday. I've never really ever thought of it as anything else.

And usually just any day of the same week we'd give presents (like cousins and ****, you mean?)
