Hardest to obtain: Fortune teller shop

Luckily I was able to get Katrina on main street fairly early. But it helps that I have 4 characters, so she only had to show up 5 times.

Otherwise I would just suggest this as well,

If you have space for another character, you can always make a new character, get your fortune told, and then delete that character. Keep doing that over and over until you have visited her enough to unlock her shop.
