Is the new update happening all at once? Or is it happening gradually over the course of the next year?

All at once on November 5th, its last Major Update then there be minor updates but we don’t what that entails.

As others have already said, the update is Version 2.0 and is a massive content update and is actually the last major (free) content update, and is adding all the content they had shown.
