I had to keep this recipe somewhere so I don't forget it, so I thought I may as well blog it in case anyone actually cares and wants to try it.
Ingredients:
100g caster sugar
1 teaspoon of bicarbonate of soda
4 to 6 tablespoons of golden syrup (you be the judge)
200g/large pack of marshmallows
Cheapo brand chocolate (unless you wanna go all fancy)
1.) Melt the sugar and golden syrup in a saucepan until the sugar has pretty much dissolved. Stir in the bicarb soda.
2.) Once the sugar has dissolved, turn up the heat so that the mixture bubbles until you have an amberish sort of colour.
3.) Grease a tin of any shape (not too wide so that the honeycomb isn't too thin, but not too small that the blocks come out huge!)
4.) Pour the mixture into the tin, making sure the layer is even. Then put it in the fridge to help it set quickly.
5.) Melt the chocolate in a microwave (or whatever you've got). Once the honeycomb has set nicely, spread an even layer of the melted chocolate over the top. Put back in the fridge to set again.
6.) Melt the marshmallows in a microwave too, and do the same as you did with the chocolate (as long as the chocolate has completely set). Put back in the fridge to set for a final time.
7.) Cut into blocks, and there you have it.
