Is it not a Transformer? (Not that I'm capable of identifying a transformer, but that is one, isn't it? xP) And I figured cause Splatoon got Autobots vs Decepticons that there must be a thing.

Once you've updated the game - via e-shop, Lottie will introduce you to a new red computer on her desk after you've done a set amount of designs. Then the top right option on this computer allows you to enter the competitions. Which I believe will run the 1st to the 15th of each month.

And announce a new challenge every 24th of each month I guess.
I thought they were going to do the gamestop challenge next, but I guess not.

Nah, the store items were in the game before the update, so they will likely be a nintendo zone/ wifi villager release - we know of several potential returning villagers which could have them. And Felyne and Filly's items were also in the game pre-update.
The HHC items were provided with the update, and appeared as boxes in the data mine, and if you play without the updates the items revert to being boxes in houses. There's 28 in the data mine files, but apparently only 20 are HHC items, and the other 8 are just standard boxes.

So far these challenge items are really interesting. They're things I wouldn't have expected them to do as furniture. Looking forward to seeing what else comes out!

Aw. I'm a little disappointed; I was really hoping it'd be the store items or something that'd fit my design interests like...history, cultural related or maybe something related to an old Ninendo favorite of mine like the Bubble Bobble dinosaurs or something (Bubble Bobble was my favorite NES game); or some collaberation with Kojima for some Metal Gear Solid related content 
(I think that would be cool since it is one of my favorite series).. -sigh- I'm not a Transformer fan, sorry ; I'll still do the challenge to get the item, regardless.

The curry plate is probably vegan (though the naan makes it pretty carb-heavy), bureom is mixed nuts, and there's a salad included with the 'light breakfast' (though also a soft-boiled egg...) I use those, tacos (there could be anything you want in there), the five different mochi-dishes, and the tofu-refurb of the hot pot for a lot of the herbivores. But yeah, definitely a shortage of options, comparatively.

Even though I'm happy with the huge amount of food items, even this seems to not be enough lol. I want Middle Eastern and more Spanish/Latin American food because of some restaurants/shops [and not just food] I created; and yeah, I want a separate salad bowl.

That would look soooooo cool in Kid Cat's house! And Nintendo have already partnered with Transformers in Splatoon with the Autobots Vs Decepticons NA Splatfest.

It's because Animal Crossing is made by Japanese people and Japanese people don't really get vegetarianism. I know, I lived there for 3 years. I'm not vegetarian, but I have a vegetarian (also American) friend who lived there at the same time. Japanese people just didn't understand him. There's also not many vegetarian options at restaurants. Yes, to include salads. The Japanese treat salads as a side item, so if you can get a salad at a restaurant, it's small and meant to be eaten with something else. It is not meant to be a main dish.
My vegetarian friend sometimes had to resort to eating only french fries when eating out, because there was no other good option for him sometimes where his family happened to be (rest of his family is not vegetarian).
