Quick question - if someone visits an island with Flick or CJ there, can the visitor sell bugs and fish to them with the bigger price and get bug/fish models from Flick? I was gonna open my island later since Flick is there but I wasn't sure if visitors would be able to sell to him or get models from him.

Nah. Visitors can't do squat with them. It's only for your benefit.
