The two things I most desperately wish were in this game are full 10x10 expansion for all rooms in player housing and minigames.
10x10 for all rooms in player housing because interior design has always been my main draw to the series, I've had multiple concepts ruined by the awkward room sizes we have now not allowing me to fit everything I want to, and because it frankly sucks to have the animal villagers getting to have those huge rooms in Happy Home Paradise while ours are smaller.
Minigames because there's frankly nothing worth doing online together with friends in New Horizons and it's something my best friend and I enjoyed doing in New Leaf.
I made a post a while back in a different thread with a whole lot of stuff that I wish was included in New Horizons. Here it all is:

- Minigames. Ideally, Tortimer wouldn't have been relegated to the role he has in New Horizons of being a storage locker, the mystery islands could've been a new feature for the Dodo Airlines, and Kapp'n still could've taken us to Club Tortimer. Or they could have worked out some alternative. But without minigames, there's little to do with friends online other than visit each other's shops for like five minutes and then leave.
- 10x10 expansion for all rooms of player housing. While some people are able to get enjoyment out of the proportions of the side rooms, second floor, and basement, I've had multiple concepts ruined by the rooms being too cramped to fit everything I want. As someone who cares more about interior design, has decorated their island as much as I'm going to and doesn't care about terraforming, part of the main appeal to the series for me just kind of...sucks in this installment. And it feels pointless to let us use the HHP pillars in our homes when the rooms are so awkward and restrictive.
- Home exteriors with more variety like the ones in New Leaf.
- Gracie and her fancy furniture and clothing. I love the Gorgeous Set of furniture in particular.
- Bulk crafting.
- Manilla clam stacks. Yes, I know they're living creatures, but you aren't donating them to the museum, and when you're making bait it's just inconvenient to have them take up so many individual slots in your pockets, have to head to the DIY bench, go back to digging. Especially with how many fish baits can be necessary for some rare fish.
- Able Sisters shopping cart.
- More hairstyles, particularly black hairstyles, and a stark white hair color option.
- More wetsuit colors/designs.
- Golden tools getting patched to not break. It seems pointless to earn them.
- Fossil miniatures from Cyrus if you have all of the pieces, like in New Leaf.
- Ores.
- Perfect fruit and dead trees. They would've looked nice with New Horizons' higher graphics.
- They'd never do it, since they were meant as a punishment, but I've always wanted rafflesias in these games. Unfortunately you could only get them by not developing your town in New Leaf by having less than 3 Public Works Projects, but that was impractical.
- All of the classic families of gyroids. While the new, smaller, cuter designs appeal to more people, I miss the old style. There were a bunch of different ones I liked.
- Snowman, Snowmam, and Snowtyke would be cool. Or, at least just Snowman. I loved Snowman Bingo.
- The campsite having an igloo instead of a tent during Winter.
- Mii masks maybe? I liked using them sometimes in New Leaf.
Probably more too, but that's what comes to mind readily. Might post again if I think of anything.
