To change the course to blue in tennis, hold 2 when you hit restart the match, or right before it goes to the screen when you pick who's on who's team.

To make your bowling ball different colors hold the controll pad before the bowling game starts

Up: Blue
Right: Gold
Left: Red
Down: Green
