(ANSWER FOUND) What does the dates contribute to the collectibles?

I have seen people do date swaps in the TBT Marketplace and as someone who hasn't got any collectibles yet, I am confused, but I'd like to know what's the significance as I am highly considering on buying some in the near future...

So my guess would be the placement of it in the lineup you have? For arrangement purposes?

Yes, the dates determine their placement in the lineup. Newer date collectibles are put in front starting from the left, causing older dates to be pushed towards the right if that makes sense.

e.g. 2017 apple, 2020 cake, 2019 pear
Order would be visible as: Cake Pear Apple (2020-2019-2017)
