I had preordered on Amazon UK before but then was afraid of delayed shipping and preordered to pick up at a shop I can cycle to.

So are you done working or just taking a break? Are you dedicating the rest of your day to playing? So exciting! And is your BF going to take the digital version instead or will this town transfer to your digital copy since it’s stored on the Switch itself?
I prefer to avoid taking long breaks so I get my work done earlier and feel I earned it and go play in peace.

The digital version is on my Switch. To avoid potential conflicts I deleted the preloaded game I had, since it hasn’t unlocked yet.
I created my island on my Switch with his cartridge.
Since you asked, after saving my game I used the cartridge on his Switch (where there’s no digital version and he just opened the game quickly and closed without saving, before finishing the tutorial). On his Switch there’s no save file, it starts from the beginning with identifying the player and selecting the island.
So we definitely (will) have two separate islands, by swapping the same cartridge between two consoles.

I also have digital version of Let’s Go Pikachu and he has the cartridge.
I deleted the software of the digital version from my console and used his cartridge. My save data appeared normally.
So I assume the same will happen with Animal Crossing: when digital is released I can continue on my save game using the digital version.
