I accidently said bye-bye to my favourite villager!

if i understand your question correctly they will ask again and you can say no

If they're not in boxes yet, they can still change their mind. Just keep talking to them and they should eventually say something like "oh, I'm moving in 3 days and I'm still not packed!" And it should then give you the option to ask them to stay

Usually before they pack up another villager will mention so and so is thinking of moving. Talk to everyone. You have big chance of getting them to stay.

They will ask you once per day until the day they pack up. So you still can reverse this if he's not moving out tomorrow.

It's reversible until the day they are in boxes.

They'll give you the choice over the next couple of days to change your mind.

(They'll say they're sad that # days are left until they move, which give you the choices to tell them to stay or say goodbye again)
