Same thing happened to me... He hasn't asked me again yet, but I read somewhere he asks once a month or you can just use another player living in the town to enter his shop and answer the questions right off the bat or something like that.
Answer "Variety" and you'll get Nookington's.
Answer "Balance" and you'll get NookWay (this is what I did by accident...).
Answer "Hours" and you'll get Nook 'n' Go (this is what I want).
Answer "Nothing much" and whatever store there is at the time won't change.
