There are two sources it can come from, the Creators of the game, or somewhere else... a good way to tell is like this: the ones that look extremely good are from the creators, the ones that look so-so to crappy are from actual gameplay.
 
You can't really do that with a game. I've only heard of fake things with the PS3 at E3... seriosly, lets just stop trying to guess what it'll be like and go play it ourselves. :0
You can. It's a pretty widespread thing. I mean, compare the pre-release promotional screenshots released by the developers and then compare them to the actual screenshots put out by reviewers. The difference sometimes is quite profound. Even games which don't really need that sort of thing done to them (TES4: Oblivion, for example) have been beautified in the promotional shots.

And regarding the watermarks :)P)... dude, just compare those two screenshots; Red Steel and Medieval 2: Total War. They're the same dimensions exactly!
