Hmm I just rate them based on their average price actually, so I'd know to trade who with who.
As it's more easier to help you get a highly wanted villager. (So you know who'll be the bait)
Anyway, this is just based upon what I see in the forum. (GF and ACC)
I might be wrong, so don't really take what I said
I'm pretty sure the octopi (Zucker, Octavian, Marina) are really wanted and about 15m+ (someone even offers 21m)
Kabuki and Ankha are about 15m as well. Lolly as well.
Beau, Stitches, Marshal, Julian are about 10m? Might be higher tough.
Maybe Mira is about 10m as well. She's one of the rare great uchi.
The wolves are about <10m. Depends on who.
Most of the deers are quite expensive themselves.
And there's a lot of 1m XD

Oh my goodness this game is frustrating me. XD I'm TT'ing back and forth to get rid of the villager I need gone, and he finally came running up to me with a "!" and I was like "OMG YES FINALLYYYY" but turns out he just wanted me to pick fruit for him ._.
