I'm just gonna based my list on pure looks and aesthetics. If we're talking about personal attachments and interactions I've had in my games over the years my list would vary lol.
Normal: Daisy- She's my normal on my current island and she'd also take the list if I ranked this in terms of personality and interactions we've had in game. From an aesthetic point though her colours are so nice together and I love her facial features.
Peppy: Shino- I'll admit I hate the fact that she's a peppy personally, but from a design standpoint alone she's probably my favourite. I absolutely love her colour palette and the fact that she's inspired from an oni. I don't have any interest to have her on my island, funnily enough but her design is a 10/10 as far as I'm concerned.
Dotty was also a contender for this but if were to judge on looks alone I think Shino still wins.
Sisterly: Reneigh- Honestly her design is absolutely fire idc what anyone says bye. I feel like people kinda sleep on the horses but they're honestly one of my favourite species and a lot of them have super solid designs. Before her I would have said Phoebe, but Reneigh's colour palette and overall design is so perfect to me.
Snooty: Whitney- I feel basic as heck for choosing her as my favourite but it's true LOL. I think part of this favouritism stems from the movie, but she was a dreamie of mine back in New Leaf and has just always stayed on top for me. Even though she's basically a white wolf, I always had a head canon that she was a white arctic fox, and I really love her eye design and her pinkish nose. Something about it just hits different...
Lazy: Beau- Another basic answer I guess, but I've always loved Beau's design lol. I know he's just like an antelope but I've seen this pattern where I find the villagers that just look like normal animals are top tier to me kdfdkgf. His droopy eyes are so cute and I love the white patches around them. He just has such a cute face, combined with his natural colour palette? I couldn't ask for more.
Smug: Julian- I don't care how overrated he may be, I'm a Julian stan and I will die on this hill bye. He was one of my very first dreamies and while I actually came to love him through in game interactions and his personality, I can't deny that the reason he was on my dreamy list was because he was a blue unicorn- Like, what's not to love?
Cranky: Wolfgang- I'm pretty sure Wolfgang might have my favourite design and overall aesthetics in New Horizons (from his outfit to his house). I feel like he's very consistent with his style and I was pleasantly surprised by his change in NH because it matched how I head canonned him back in my New leaf file. I feel like his dark, muted blue fur goes well with the warmer tones he has on his snout, eyelids, etc. Just super solid and pleasing to look at imo.
Jock: Pierce- I'm not a fan of jocks but I think Pierce is one I've made an exception for. He does just look like a blue falcon or something, but again, I seem to have this pattern where I like villagers that look like "real" animals lol.
