I haven't exchange gifts in quite a while and honestly probably won't be this year either since everyone I know (me included) has been financially impacted from COVID. BUT I can talk about previous rationale I've had when I used to partake in a lot of secret santa exchanges and had to compile lists for that.
I usually took two approaches, one where I listed extremely specific things that I wanted and another where I would be really general with terms and let someone else come up with whatever they wanted to give me. The important part is being okay with whatever you receive if you give vague guidelines, but as someone who is often not even sure what I want it was always interesting to see what people would come up with. If you wanted to be surprised and give the people asking for your list a bit of leeway to be creative, I think it's interesting seeing what people come up with.
For example, one year I just listed "something purple and fluffy" on a secret santa list and the person ended up gifting me a fuzzy purple pencil case since they knew I liked doing art. And I found that immensely helpful because the container my pencils came in was flat and metallic and not very portable, so I was able to find use for it and it fit the requirements of what I asked for so aesthetically liked it as well.
At this point in my life now though, the things I would want are all functional boring "adult" items. I could use a new cooking set because my roommate scratched the non-stick coating off of mine. Or a full-length mirror because while my old room had one, the room I am renting now does not.
