So, you always pick spots for their houses. But you can choose the same spot for multiple villagers? Does the map get filled up?

nope you can put them all in the same exact spot if that's what you want to do
 
If you ask digby to rebuild a facility does it make you decorate it again or is your furniture still there? I have this cactus in the middle of my kitchen I forgot to take out xD

I believe you have the option of keeping the furniture in place if you wish (i.e., you shouldn't have to start from scratch).

I forgot to move a chair in my hospital. Am I able to remodel?

Eventually you'll have the option to speak with Digby during the day in Nook's Homes, and you'll have the option to redesign. So you should be able to go in and move the pesky chair.

I don't remember exactly who gave me the duck beak, but judging from my past client list, it was probably either Gloria or Bubbles.

I have the game in japanese, but if I remember correctly, the first option [I don't know what's the first option in the english version] let's me just remodel the house, no new plot no new rooms, just remodel the existing house. The other option lets me choose a new plot of land and, depending on the layout you choose for the house, you have more space or more rooms.
 
is there a way to choose what villagers appear in your town/facilities?

The only way to choose who appears in your facilities is via amiibo card. You have to summon them. You don't appear to be able to summon villagers to your main street (though I think that'd be a cool option once you've unlocked every villager!).

How much unique text/dialogue is in the game?

Is it more varied than in ACNL?

The dialogue is completely different from AC:NL, but I get the sense it will become repetitive quickly in some cases (e.g., villagers of the same personality will ask for your designing services in the same way each time). Dialogue does vary depending on what facility you're in and what role the villager is fulfilling (e.g., a jock doctor will say something different from a smug doctor, who will say something different from a smug teacher, etc.). All that said, I find speaking with villagers to be a secondary thing in this game and I don't talk to them much.

Build enough [if not all] of the public buildings, that should do the trick.

It all depends on you. Most people get them so that they can have their favorite villagers, others will collect ALL of them. The NPC/Special cards are the "most useful" ones since you can design houses for the special characters [like Isabelle]. But they don't add anything special, they are just a way to design a house for your favorite villager without waiting for them to appear in main street.
