All of the shinies I've caught across all games so far, mostly in order:

-Jigglypuff (Heart Gold, safari zone, it fled)
-Tentacool (Heart Gold, random encounter, first ever shiny caught)
-Seedot (Emerald, random encounter, lost in save file corruption)
-Wailmer (Emerald, random encounter, lost in save file corruption)
-Treecko (Heart Gold, randomly hatched)
-Bidoof (Platinum, random encounter)
-Whismur (Emerald, during failed Ditto hunt)
-Cobalion (Black, 3408 resets)
-Mudkip (X, hatched)
-Fennekin (X, hatched on 408 eggs)
-Zigzagoon (Omega Ruby, horde encounter)
-Seedot (Omega Ruby, horde encounter)
-Moltres (twice on Fire Red, but accidentally reset over the first one)
-Numel (Omega Ruby, random encounter)
-Onix (Leaf Green, hit run away before realizing)
-Totodile (Soul Silver, ~200 resets)

Current "ongoing" hunts are Tepig (Black 2 and White 2), Virizion (Black), Palkia (Pearl), Mewtwo (Fire Red), Eevee (Soul Silver and Emerald), and Chespin (Y). I say "ongoing" in quotes because I haven't really done a whole lot of hunting on any of those games lately and have no idea when I'll actually get around to finishing any of them.

The first shiny Pokémon I ever saw/caught (other than red Gyarados in Silver, but that doesn't count) was a random Wingull in Pearl.

Some time later, I was playing my old Silver cartridge and randomly came across a shiny Aipom while headbutting trees in search of a Heracross.

Then I got pretty big into shiny hunting for a while in Gen VI; I got a ton of shinies from Friend Safaris and DexNav in X and AlphaSapphire. I won't bother listing them all here since it was so many. ^o^;>

The only shiny I hunted in Sword/Shield was Wooloo, because it's just so darn cute.

I love the dedicated screenshot button the Switch. ^_^

The only shiny Pokemon I've ever randomly encountered was a shiny Golbat I encountered at Mt Silver during my first ever Soul Silver playthrough (I caught it, but deleted my save file with it a few years later).

Other than the red Gyarados at the Lake of Rage, I've never had another shiny lol. Every new gen I always half-heartedly attempt to get one but never follow through properly I'm thinking of replaying Shield soon though, and perhaps trying to get a shiny Grimmsnarl for my team.

I got 3 shiny Pokémon yesterday.

First was Haxorus in Black 2. It's guaranteed, but I still worked hard to access it.
Second was Nuzleaf (then Shiftry) in Ultra Moon. It was my second encounter when shiny hunting in the Ultra Wormhole.
Third was Yanmega in Ultra Moon. It was the next encounter in the Ultra Wormhole.

I just caught a shiny Snorunt in Pokemon Shield. It's super cute but I just wish I liked the evolved forms better. I did end up giving it a dawn stone to become Froslass. This is my first shiny pokemon besides all the hacked ones I got through random trades.

I'm currently breeding for my shiny team once my S/O is able to visit and drop off his Shield cartrige and I can start my playthrough. Golett took 383 eggs; Fletchling took 293 eggs. I've started working on Sobble, so four more shinies to go for my team. My S/O recently reset his Shield save file so he could restart in Japanese and we could each get foreign Dittos with good IVs.

The only shiny that I've caught in the wild is Vanilluxe, ironically when I was searching for another Pokémon to complete the Sword Pokédex. I've also caught a number of shinies from the Dynamax Adventures in the Crown Tundra's Max Lair:

Just wish there was a bigger difference to it's shiny look, because I keep kidding myself, thinking I got one, but one look at the stats proves I'm wrong XD

Took a quick visit back to Pokemon Shield today for a quick stint and got screenshots of the current shiny Pokemon in my team, it's not my usual team but I'm trying to level Raikou, Rapidash and Vulpix to level 100 before probably swapping some or all of them out. Vaporeon and Sylveon are nearly always in my team though as they're my favourite shiny eeveelutions (and my favourite eeveelutions altogether anyway).

I also have shiny versions of the rest of the Eeveelutions, Venusaur, Charizard, Dragapult, Drampa, Zeraora, Drampa and Gyarados in my boxes on Shield, currently I'm shiny hunting a Igglybuff from egg hatching and an Xerneas in the Crown Tundra lair but I've had a big break from the game so it isn't going very well at the moment.

I've done a teensy bit of shiny hunting! I'm still very new to it and don't do it super frequently though. My first shiny was a random Mareep in HeartGold when I was little—I caught it but when I went back to look at that save file recently, I couldn't find her anywhere. ;v; I'm hoping to reclaim her someday! My first shiny hunt was Giratina in Platinum, which took me 752 soft-resets. I'm still working on my second hunt which is Azelf; I'm at 5150 soft-resets now and I'd like to hunt Uxie and Mesprit afterwards.

The file is long since gone but I remember using the Poke Radar years ago to hunt for a shiny Ditto. It was such a cool little guy.

After 1,116 eggs, I finally have the elusive black sheep. I named him Floof. :3 I started breeding Wooloo after my S/O had already started and had already hatched around 700 eggs, so it took over 1,800 eggs between the two of us.

Okay, I know Pokemon Uranium isn’t an “official” Pokemon game or whatever, but I was searching for Buizel on route 3 because I’m trying to catch all the Pokemon in the game this time, and I just encountered and captured a shiny Smore! It’s a bug type Pokemon that evolves into a bug/fire type Pokemon. You can tell the one I captured is shiny due to its green coloration difference and the fact that it has a star symbol by it. It also had the sparkle effect when I encountered it.

I've been really lucky with shiny mons in SwSh, but my whole end-game fun has come from shiny hunting. These are some of my shiny mons from my current playthrough:

I actually only started breeding for shiny mons this gen, I never had the patience before lol. I got my shiny Rowlet in 454 eggs and Scorbunny in 320. Honestly, thank jeebus the numbers were that low otherwise I would have given up...

I'm so glad I didn't stop.
So recently, I had the idea of resetting my Heartgold save file. Just to experience it again, I do plan on resetting some diamond and Pearl files I've got. And I just wanted to have a go at soft resetting for a shiny starter~

A couple of weeks ago I caught a shiny Wimpod in Shield without even realising it! I was searching for a specific Pokémon in the Giant's Mirror and ran into a Wimpod instead. I didn't have one yet so I caught it. It was only after, when I looked at the screen pictured below, that I spotted the little icon indicating that it was a shiny Pokémon and thought, "wait, what?" Then after a moment it occurred to me that this Pokémon is usually purple - not red! My girlfriend was watching me play, and while I was battling it we were even talking about whether or not she had a Wimpod in Sword, and somehow neither of us clocked it was shiny.

I'm not really a fan of Wimpod/Golisopod, but as far as shiny 'mons go I think this is a pretty cool one.

I caught my first random shiny in Legends: Arceus!! Everyone, meet Ramia, my sparkly Starly~! He's actually already evolved into Staravia but shhh

He was a regular spawn with Starly's Dex entry already perfected, so based off what I read it looks like this little fellow's odds were 1/1024! I really love the whole Starly line's shiny forms (the brown + periwinkle on Staraptor is ), so I'm even more thrilled to have found him.

The only shiny I've ever found was I randomly found a shiny Eevee in one of my normal type friend safaris while looking for a Audino for someone else in Pokemon X
luckily I had some Master balls I got from trading so I was able to catch it
back then I didn't have my shiny charm but the friend Safari increases chances of finding a shiny so this was a 5/4096 chance
To this day it still remains an Eevee because if I do decide to evolve it I'm not sure which Eeveelution I want or if I even want to evolve it at all so since I'm not ready to make decisions yet it's still an Eevee lol
Forgot it's exact catch date but if I recall it was in August or July last year

When I was playing through the game there was a mass outbreak of Onix, and I caught a shiny one that appeared and evolved it into a shiny Steelix. It's really cool and all, but I wish I had a shiny Lucario instead.
