Does the amount you donate continue when you come back? Like if I was to donate 50 now then buy a new ticket again and donate another 50 does it show it as the 100? Even though it was done on another ticket?

Where can I see how much dust I've collected/donated? Or do I need to manually count it from the transaction log lol?

You can see your donated amount more easily by filtering your transactions. Set filter for the carnival dust, and also set target to celeste. It will only show the transactions where you donated to celeste.

My understanding is that you need to donate 200 dust total to qualify for the Bell rewards by the end of the deadline
