I just want to say that ramen is soup though. ACTUAL ramen (not the instant package stuff that people are familiar with in America) definitely looks more like soup than what you're probably familiar with though, since it actually has veggies and other things in it.
ANYWAY...
I'm making homemade miso soup for dinner tonight. It's actually stupidly easy to make. Yes, even in the USA, though it requires some special ingredients - specifically miso paste and dashi (bonito fish soup stock).
My miso soup recipe:
- Boil 4 cups of water in a large pot
- Stir in 1 teaspoon of HonDashi (the ratio for this is 1/4 tsp HonDashi to 1 cup of water if you want to make less soup)
- Scoop out a small amount of the hot dashi + water into a small bowl. Whisk in 1 tablespoon of miso paste until smooth. Dump it back into the pot and stir.
- Do this again over and over until you've added 4 tablespoons of miso paste total into the pot.
---- I use awase/yellow miso, but white miso is good too. Ratio is 1 T to 1 cup of water/dashi. You can do less miso if you want less of a salty/miso flavor.
- Let cook on medium heat for 5 minutes.
- Dump in whatever else you want. Cook for 5 minutes.
- Put in bowl and eat!
Japanese recipes usually have stuff like seaweed and tofu chunks. You can do that but don't have to. I'll usually just dump some cooked white rice and some veggies that I have on hand into it. It makes it very hearty. If you guys have only had the instant miso soup (you can buy packets at Asian grocery stores and regular American grocery stores sometimes in the international foods aisle), you gotta try the real thing. It tastes so much better.
