What have you been cooking?

Today I made palak paneer and samosas, I've never made either before so they turned out kinda meh (the samosas were a bit dry) but I'm overall proud of myself, for my first time they still tasted decently!

I plan on making Buffalo ranch hoagies on Saturday. You put 3-4 boneless skinless chicken breasts in a crockpot, with 12oz of Frank’s Red Hot Wing Buffalo sauce, and some ranch seasoning. Cook it then shred it and put on hoagies , you can dip the sandwich in ranch dressing if you want. I have never made it before but I saw it on Pinterest and it looked good and easy to make so I thought I’d give it a try.

I’m waiting for some bananas I bought to get brown so I can try making banana bread , I’ll post pics when I do :)

i made some banana bread the other day with no sugar, only honey. it turned out pretty good and moist.

Can you share the recipe? I'm just looking for ways to use less sugar and I plan on making banana bread next week
 
here’s the Buffalo ranch shredded chicken, made in a crockpot. I had some on a hoagie roll, it’s spicy and really tender from cooking on low in the crockpot for 5 hours. It may not look pretty but it tastes great.

Every day I cook dinner for the family, except weekends. Usually it's rice with 2-3 dishes.

Mostly stir-fry dishes like mixed vegetables with broccoli and carrot or bittergourd with minced pork and egg. Sometimes I make a soup, with pork balls and fuzzy melon or with a whole chicken and herbs. I might braise chicken wings with shiitake mushrooms in oyster sauce or I might stew pork belly or pig trotters. With fish, I steam or braise. The one thing I don't do is deep fry. I used to do it but, in an effort to eat more healthy meals, I've not done any deep frying in my kitchen for many years. (On weekends we eat out. That's when we tend to order fried food or red meat anyway. 🤪 )

Tonight I will prepare a steamed egg and minced pork dish, a mixed veggie stir-fry with cabbage, carrot, baby corn and mushrooms, and a steamed fish fillet with ginger and spring onions.
 
I just made macaroni and cheese.

Oooo I love both of these dishes. I bet they were still great to eat! Something about home cooked food that is just way tastier than going out.
I made homemade french bread and then cut it and made it into french bread pizza/toast with basil pesto, tomatoes, and colby jack cheese. So good! First time I've done this. Gotta do it again sometime.

If anyone cares, I used this recipe for the french bread. It was super easy to make, it just took some time because bread needs to rise.
I'm so scared of making bread I don't know why! I feel like it won't rise if I do it. This recipe looks so good though and I feel like it's cheaper long term to bake my own so I might try soon hmmm
Made Florentine Butter Chicken with Spinach, Peas, and Tomato Pasta... not to toot my own flute but the chicken was especially yummy 🥰

Salt & vinegar is the supreme chip flavor and I never thought to season anything else with that for some reason? It sounds so good.
Mostly frozen meals lately due to sheer laziness. My family likes eating dinner out frequently.

This all sounds so good! I've never heard of fuzzy melon before you mentioned it. What's it like? 0:

You can google "fuzzy melon" and see images of it. Sometimes it's called hairy melon. Because it's hairy or fuzzy on the outside. It needs to be peeled before cooking. Not to be confused with the winter melon or other types of gourd. Fuzzy melon is green, and mostly used in Chinese and Southeast Asian cuisines.

By itself, fuzzy melon has little taste. But that means when you cook it, it'll absorb the flavours of the seasonings and other ingredients such as meat that are in the dish, and then it becomes tasty! You can stuff and steam it or stir fry it, or use it in soups.
 
Tonight I did some veggie macaroni and cheese! ^^ I layered the macaroni in a glass pan with some freshly-grated cheddar and colby-jack cheese, fresh steamed broccoli, sliced Kalamata olives, and ground beef (vegetarian in my family's case, but you can substitute ofc), and seasoned it with garlic, dill weed, and a little bit of salt.

Just made this: Chocolate peanut butter banana smoothie: 1 cup almond milk, 1 cup spinach, 1 frozen banana, 2 TBSP peanut butter, 2 TBSP cocoa powder, 1/2 TSP of vanilla extract. Blend and enjoy, tastes kind of like chocolate peanut butter ice cream but a lot healthier. (it's really good :) )

I made tomato soup with all the old tomatoes that didn't sell on my produce stand. It was pretty dang good to. Made some grilled cheese and tomato slices to go with it.

I've never had freshly made tomato soup before, only from a can, that sounds really good :)

You can't taste it :) That's why I love smoothies, you can throw some spinach in there and get some veggies into your diet without even noticing. Plus you can always omit the spinach if you wanted, it's not necessary to have it in there, the smoothie would still be good without it
 
Well I grow spinach and lettuce, so I could always blend up the older leaves. I probably won't be able to tell when it's all pureed anyway. As for the soup with actual tomatoes, it's fairly easy to make. I have the recipe card lying around somewhere. I can give it to you if you think it's something you'd be interested in trying.

I have some banana bread in the oven right now. It’s got about 20 more minutes left to bake. I put chopped walnuts in it too. My whole apartment smells like banana bread now, I love it lol. I’ll post pics and the recipe when I’m done. It’s my first time ever making banana bread

Edit: here it is! Can't wait to have some tonight w/ a hot cup of coffee :)
