What have you been cooking?

I made tortang giniling (Filipino ground beef omelette) for breakfast this morning with rice. I’m making salmon and asparagus for dinner.
 
I made my blue deviled eggs today and they turned out great! they're a slight green tint since the yolk was yellow but the blue/aqua color looks super cool. Clarinda and Misty sure like them!

Mostly smoothies lately. I plan on making some homemade chocolate chip pumpkin bread at some point during October
 
I made pork stroganoff from scratch! It turned out very nice! I had to alter the recipe to my liking (it called for 1.5 cups of pasta but I put in 2.5) and fiddled with the sauce a bit (seriously, some recipes screw you over from the get-go. You gotta know what you're doing lol) but it worked!
 
For today we're eating quesadillas with the leftover mozzarella chicken from yesterday's meal. Might make some cookies but we'll see what the mood of the house is by the time dinner time arrives.

I kinda want some banana bread now that I saw Autumn's banana bread from weeks back.
 
haven't properly cooked beyond just putting things in the oven/making pasta for a few days but I made an amazing chicken pasta bake the other week!! honestly probably one of my favourite meals, definitely need to find the time to do that again
 
found a recipe online for monkey bread and it turned out great! the recipe honestly could've used some more cinnamon but everyone in our house loves it :)

This morning I baked my favorite brown butter chocolate chip cookies, but substituted some of the chocolate with the new caramel chips from Trader Joe's. I need to add more next time, the chocolate overwhelmed the caramel. I also made flat bread dough and I'm going to roast some chicken thighs to make some Mediterranean style wraps for dinner.
 
Seeing as how I love to cook, I wanted to start a thread on it! I usually cook a majority of my meals since it's just the cheaper option as opposed to going out. Have you cooked anything lately? It doesn't have to be fancy or even good looking, I just wanna know. Pictures are encouraged but not required.

Hopefully I can grab some new meal ideas from y'all! I've been kind of in a rut lately with food.
Lately i've been trying my hand with some new spices and making Ricotta paprika chicken. A mix of onion granules, garlic granules, salt, pepper, paparika and mild peri peri. Mix it all together, fry the chicken then slice open and put inside ricotta and spinach, top the chicken with mozzarella or cheddar cheese, a little sprinkle more of paprika, and put it in the grill for 3-5 minutes until the cheese has melted and the paprika a little bit darker.

It's excellent imo.
 
I've been meaning to post on this thread more as I've been diving into my cooking journey a bit more, but today I made "kung pao cauliflower" as an alternative to chicken (my dad is vegetarian so I'm not gonna force him to eat meat, that'd be mean lol) and it turned out great! I already like cauliflower wings since they make for an awesome "big" snack, but these were also amazing

i feel like i cook the same few things over and over and my options are further limited by not having an oven, just a stovetop. i don't like to cook meat (although i'm not vegetarian, i just prefer not handling raw meat) so for protein i often eat eggs or beans. i often eat noodles and egg, carbonara with cheese instead of meat, or like... pancakes. idk i'm not a great cook and don't spend a lot of time preparing food
 
cooked up some impossible burgers today! its really unbelievable how tasty they are especially with lettuce and tomato 🔥🔥🔥 thrilled that i found a burger to enjoy again :3 i highly recommend them! even my meat loving partner loves them and actually ordered one at a restaurant last time over a meat patty

I had those before, I'm not a vegetarian but they were actually really good. I put lettuce, tomato, condiments, and onion on them :)
