Greek Quinoa Salad
Ingredients;
-Quinoa
-Feta
-Cucumber
-Tomato
-Black Olives
-Dill
-Balsamic Vinegar
-Olive Oil

at least that's how I make it but it's very adaptable.
 
gonna be whipping up some seared scallops for dinner today!

My method is to thaw out and very thoroughly dry some scallops, then cook each side in butter (with a little dash of salt)! I start on high heat to get some browning going, then lower the heat and put on a lid to steam cook. I'll leave it for a couple minutes, then turn up the heat again and sear the other side of the scallop. Our family eats these without any particular side, but I'm thinking of making some rice or a salad or maybe some grilled veggies to go with the scallops.

There was a tiny bit of homemade frosting leftover because it wasn't used on my birthday cake last week, so I decided to bake some cupcakes to use it on. It was my first time making cupcakes from scratch (I usually just use a boxed cake mix). I tried to make them look like BT21 characters (Shooky and Van), but because I was so short on frosting, I couldn't really make them as neat as I would have liked. Oh, well. I tried! XD

I made banana bread loaves today from the last of the eggs we had. ✨🍌🍞✨
I had some frozen bananas to use up.
 
Before I got sick I made a lot of avocado and squash soup. It was pretty good. Thankfully I made a lot so I could just heat and eat it and then go back to sleep lol.
 
Made a toasted spicy turkey cheese egg with grilled onions sandwhich for lunch earlier today. Had it with some cauliflower chips (did not make them) as a side.
 
Last night, I cooked pork ribs in my slow cooked for about 7+ hours. Although I would prefer bbq, they turned out nice and tender.
My sauce included;
cumin, smoked paprika, paprika, salt, pepper, garlic, butter, tomato paste, chicken broth, molasses, brown sugar, chipotle Tabasco, liquid smoke (adds strong flavor and is natural), apple cider vinegar (I notice this tenders meats)
For my side dishes I boiled cauliflower, then let sit in heated over. Whisked together a cheese sauce to add on top which was very tasty. Also on the side was quinoa since I forgot to buy rice. Lot's of leftovers!

Tonight, I ate black cherry ice cream.
 
Coconut curry chicken with quinoa, garden kale and lettuce with creamy dill dressing, vanilla shortcake cupcakes with a golden Oreo and fresh strawberry baked into the bottom topped with marshmallow icing.

don't know if this strictly counts as 'cooking' but i just made some bubble tea with my siblings! it's actually super simple to make, so for the amount of times we've bought it i don't know why we didn't try making our own sooner

I LOVE making bubble tea, i have a hard time making the tapioca pearls from scratch soooo sometimes i cheat and buy the pearls, but it's still way cheaper than getting at a boba shop.

lately at home we make a lot of "burrito bowls" which is typically shredded chicken with various spices and seasonings, cilantro lime rice, bell peppers & onions sliced up and then everything thrown haphazardly into bowls. self service cause not everyone in my house likes grilled onion. i like to load my bowl most with bell peppers, if you pan fry them they get a delicious satisfying crunch that contrasts the soft rice SO well.
 
Yesterday I made an omelette with peppers, onions, and tomatoes, and today I made rice pilaf! I haven't had it in a while even though it's a dish I love.
 
Today I made omurice and chocolate chip cookie dough. It will chill overnight, and tomorrow I'll bake chocolate chip cookies!
 
I started learning how to cook recently as I'll be moving out soon, and I've been making mostly different types of soup! I also learned how to cook a bunch of different Thai recipes, and I'm loving my pad thai. (∩˃o˂∩)♡
 
I wouldn't really call it "cooking" and it's not THAT great, but I did make this super cool dish for dinner to celebrate the big news I had today. It's inspired by a dish my mom made years ago. Barbecue mashed potato meatballs! 🎉

It was superrrrr savory and tasty, although next time I make this I think it would be better with Chipotle meatballs instead of Italian. Ah well, as they say, you usually don't get a dish right the first time! :giggle:
 
I’m trying to eat more WFPB (whole food plant based), and this is my delicious attempt at a new breakfast item:

Sweet potato toast two ways
Whole wheat toast with sweet potato spread over + sliced bananas, raisins, chia seeds + a little maple syrup drizzled on and a sprinkle of cinnamon

Whole wheat toast with sweet potato spread over + kale sautéed in veggie broth with garlic and lemon zest + balsamic vinegar drizzled and a little extra zest

Side note: I didn’t know balsamic vinegar was so tasty. I just heard ‘vinegar’ and assumed it was a yuck topping.

Throwing a buncha veggies in the oven with optional fruit, blend them, boil a root w/ a bouillon, pour the root and some of that starchy water in the veggie blend, add optional quinoa/cheese, pair with an optional meat/bread.
 
I made two loaves of Hokkaido Milk Bread! I love it toasted with a small dollop of salted european-style butter. Proud of myself, since most of my baking has been a fail nowadays.
 
For dinner tonight I made a risoni pasta with garlic, red onion, cherry tomatos, parsely, basil, salt, pepper and olive oil.

It was so nice I just regret not making enough for lunch :(
 
I have been making a lot of different pasta this week (I'm Italian) I am off tomorrow to go buy fresh ingredients to make a mushroom, spinach and bacon risotto for dinner tomorrow night :)
