Recently I've been getting into egg salad and fried rice. They're just quick simple meals that I can make when I'm not feeling my best and not willing to cook something really busy. My family has this egg cooker thing that looks like a little spaceship that boils up to six eggs at a time, and is so helpful when I'm making eggs/egg salad.
If you've ever made fried rice before you might have had the problem where there were too many egg bits in proportion to the rice. A good hack to solve this is by putting your rice in the pan and frying it for a minute or two, scrambling your eggs, and putting it on top of the rice. Quickly stir it around cutting apart the eggs and coating each grain of rice to the best of your ability. Continue your fried rice like normal and now you have equal eggs to rice proportion
Made some cumin rice! I don't usually eat basmati so it was a welcome change. I ate it without any accompaniment, but I might try to whip up some spiced potatoes or something next time.
Lately I've been making eggs, but I always feel sick after eating them so I'm probably not doing a good job at making sure they're cooked. I'm thinking of making some pancakes or French toast, though.
A few weeks ago, I learned to make homemade beef meatballs with parmesan cheese and bread crumbs in homemade cento tomato sauce. It came out so well that we've made it about 3 times since! I'm actually thinking I'll make it again this weekend.
been keeping things really simple. usually i make my own pasta sauce but this week i made a big pot of pasta w/ground beef and have been eating it for lunch each day. i used a pre-made basil sauce and it's not as flavorful as what i typically make but still yummy nonetheless.
Lol, I’m so bad at cooking I could burn ice. I just put things in the microwave. When I was younger, I managed to set the microwave on fire by putting easy mac in there without water. I was also withdrawn from the cooking class in my school and put in sewing instead. I can’t currently cook well, if at all, but I can sew like a boss. I just made a microwaveable dinner, because what else in the middle of the night, lmao?
cooked some more today! more fried chicken, but this time with a soy garlic glaze. The glaze is yummy but since the chicken was also seasoned, adding the glaze to the chicken made everything slightly too salty.
I also tried making onion bhaji which turned out yummy but I ended up melting my fry pan's handle
My brother did something similar a few years ago, for the longest time he couldn't even go near a microwave, let alone be trusted with a pack of instant noodles.
I have high expectations of rice (thank you, Asian household) but decided to cook instant rice yesterday. My uncle gave me some extra packets of instant food that included an instant cheese rice or something like that, and since it was expiring like next month, I thought to cook them for lunch yesterday.
(It tasted like regret.)
I had some leftover instant rice and cooked it again earlier, this time with added cheese, milk, and egg. It became this cheesy creamy rice with egg. It taste way better this time, thank god.
Been cooking basically every day nowadays... I made a chili using canned chili + canned chili beans but decided to try to fancy it up and stir-fried a bunch of garlic, onions, and carrots. I added extra cumin, a pinch of cinnamon, a dash of paprika and fried a little more to get some nice smells going. Then I added my canned stuff and a half-can of water + salt to adjust the consistency. It turned out really nice. I cooked the carrots so they were still kinda snappy but didn't have a raw taste so that textural contrast worked really well.
I'm really happy that a couple of minor additions are enough to make food go from just ok to super ok
oOoOO I looooove cooking. I haven't cooked in a while unfortunately but one of my go-tos is a super cheap meal that I had growing up when we were much less blessed when it came to money. Seasoned chicken thighs, white rice and cream of mushroom soup. Its a huge comfort food for me and it's so insanely easy to make. You can really do anything you want with the chicken.
Something I enjoy making a lot lately is "burrito" bowls. It basically has all the fillings of a Chipotle burrito. We do fajita veggies, cilantro lime rice, and pulled chicken thighs with various seasonings depending on if we want spicy food that night. I also like to add roasted corn, and some roja sauce. Deeelish.
